Description
Mung beans, also called moyashi, can be eaten cooked, in the form of flour (processed food), in salads, in kichadi or kichari (type of soup), with vegetables or just with spices, onion and ginger. The sprout (initial stage of plant development) can be eaten raw or quickly cooked. In Chinese, Japanese, and Indian cuisines, mung beans are used to make soups, fermented foods, and even sweets. In addition to consumption as sprouts, it can be consumed without tegument, in the form of cotyledon, whole, canned, sautéed, toasted or ground in the form of flour, as desserts, snacks and main dishes. It can also be used in the manufacture of noodles and in the preparation of stews.
